In discussions on natural sweeteners, maple syrup is fast becoming a contender for the top seat – and for a good reason. Authentic maple syrup is barely processed. To produce it, small holes are drilled into the trunks of sugar maple trees. Tubes are inserted to allow the inside sap to “run” or drip from the tree’s interior. The sap is then collected and then boiled gently to remove water and concentrate the sweetness. This syrup is then bottled and is ready for consumption. 

Scientists researching the nutritional composition of maple syrup have learnt that maple syrup offers more than sweetness. In fact, it’s a source of micronutrients such as manganese, potassium, riboflavin and iron, and amino acids. They’ve also identified 67 different phytochemicals – many with desirable antioxidant and anti-inflammatory properties.

To get the most from your maple syrup purchase, look for Grade B maple syrups; these are more concentrated and therefore darker in colour and richer in nutrients.
